Amphipathic, surface active, molecules with polar (water soluble) and non-polar (hydrophobic) domains. They bind strongly to hydrophobic molecules or molecular domains to confer water solubility. Examples include: sodium dodecyl sulphate, fatty acid salts, the Triton family, octyl glycoside.
