an unpleasant flavour and odour found in lean fish during frozen storage. Likened to wet dogs, to turnipy, leathery and carboardy odours (presumably in their wet states). The chemical involved is hept-cis-4-enal formed by oxidation of phospholipids. Not all people can detect this odour, about 10-15% being insensitive
